Recipe - Applesauce Muffins

Here is yet another great food storage recipe!
Applesauce Muffins

Yield: 12 muffins

2 Cups Cheerios cereal
1 ¼ cups all-purpose flour
½ cup packed brown sugar
1 tsp ground cinnamon
1 tsp baking powder
¾ tsp baking soda
1 cup applesauce
1/3 cup fat-free (skim) milk
2 TBS Vegetable oil
1 egg or ¼ cup fat-free egg product
½ cup raisins, if desired

Heat oven to 400*F. Spray bottoms only of 12 regular-size muffin cups with cooking spray.
Crush cereal. In a large bowl, stir together cereal, flour, brown sugar, cinnamon, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.

Bake 18 to 22 minutes or until golden brown.
